FLAVOR PROFILE: Milky and comforting

MOOD: Pre-workout brunch / dessert prep for a binge watching weekend / midnight snack friendly sugar cravings


1 cup Short Grain / Japanese Rice

4 cups Whole Milk (for a vegan option, you may use Coconut Milk)

1 cup Water

4 tbsp White Sugar (or to your desired sweetness)

2 tbsp Matcha Powder

2 tbsp Vanilla Extract (or 1 Vanilla Bean pod)

1 tsp Cinnamon, freshly grated bark or powder


Wash rice clean as you would in preparing steamed white rice, then set aside. In a large saucepan over medium heat, bring milk to a simmer and add the cinnamon. When fragrant, add the washed rice into the milk and stir frequently for around 20 minutes or until rice is cooked through but still has a bit of a bite to it (or “al dente.”)

Add the sugar and vanilla extract while slowly pouring in water to dilute / loosen the pudding if ever it becomes too thick. Once you get your desired consistency, mix in the matcha powder and remove from the heat once fully incorporated.

Consume warm — fresh from the pan, or keep in an airtight container and consume chilled. Feel free to top with whatever you desire: nuts, fruit / other powders, jams, chocolate, or even popcorn. Enjoy!
